Salsa Verde Cruda
This is a refreshing late summer salsa. It’s raw, so the flavors really pop and the verdant color holds.
Makes 2 cups
INGREDIENTS
1 pound tomatillos, husked, washed, and roughly chopped
3 scallions, roughly chopped
1 bunch cilantro, stems and leaves
1 garlic clove
1 jalapeno, seeded
½ of an avocado
2 tablespoons olive oil
1 teaspoon salt
METHOD
Chop. You only need to chop the tomatillos (and other vegetables) small enough to blend easily.
Blend. Taste for salt and adjust.
