Peanut Sauce

A Thai classic. Pairs well with roasted chicken, rice, noodles, pickles, and roasted vegetables.

Makes 1 cup

INGREDIENTS

½ cup peanut butter

1 tablespoon soy sauce

2 teaspoons tamarind concentrate

1 teaspoon sugar

1 garlic clove, minced

1 thai chili, minced (sub chili flake)

1 lime, juice only

¼ teaspoon turmeric powder

METHOD

Thin out the peanut butter. Whisk together the peanut butter with ¾ cup warm water.

Combine. Whisk in the remaining ingredients and allow to sit for a few minutes. Check for consistency and add another spoonful of water, if desired. Taste for seasoning and adjust.
