Dashi

Awase means to blend or harmonize. In the case of dashi, it refers to the most foundational version - a perfect harmony of kombu and katsuobushi flakes.

Makes 1 quart

INGREDIENTS

4 cups cold water

1 large piece kombu (½ ounce)

½ cup katsuobushi flakes (see note)

METHOD

Steep the kombu. Cut the kombu into 1-inch strips and add them to a pot along with the water. Heat the dashi to BELOW a simmer and cook for 10 minutes. Do not boil. The result will be bitter.

Add the katsuobushi. Turn off the heat, add the katsuobushi, and let it steep for 5 minutes more.

Strain the dashi. Discard the kombu and katsuobushi. Dashi will keep in the fridge for 3 days. Freeze for longer storage.

Note: For a vegan kombu dashi, simply omit the katsuobushi flakes.
